Sauce: |

1 oz. sake
|
1 lb. fresh squid (calamari)
|
8 oz. vinegar
|
potato starch
|
2 oz. hot sauce
|
oil for deep frying calamari
|
2 oz. soy sauce
|
4 pieces broccoli
|
4 oz. sugar
|
4 oz. carrots, julienne
|
|
1 tomato, sliced
|

Lettuce
|

Clean calamari and cut into bite-size
pieces.

Dredge calamari in potato starch.

Heat oil to 350°
-
Deep fry the calamari until crispy (about
1-2 minutes).

Mix sake, vinegar, hot sauce, soy sauce,
and sugar in bowl, blend well.
-
Place 1/4 of lettuce in individual serving
bowl.
-
Add one piece of broccoli, 1 oz. carrots,
tomato slices, and cooked calamari.
-
Pour sauce over and serve.
